Our Trinitario cacao nibs come from our smallholder farmer partners in Santo Tomas, Davao del Norte on the island of Mindanao in the southern Philippines. Mindanao, Philippines, with its ideal tropical climate being close to the equator, even rainfall year round, and mix of clay and loamy volcanic soil, provides an amazing terroir to grow cacao and other natural foods.
The cacao beans have a clean, mild flavor with notes of banana and other endemic flora and fauna. The Trinitario bean variety, which less than 10% of the world's chocolate comes from, also has a relatively high cocoa butter content. The nibs undergo manual roasting and cracking of the shell and winnowing for approximately 25-30mins, which we've found to be optimal without being bitter and with a nice chocolate flavor.
Cacao is a superfood rich in flavonoid antioxidants, and contain a variety of unique phytonutrients including high amounts of magnesium. Enjoy the nibs atop acai bowls and smoothies, or simply by itself as a crunchy snack that provides natural energy all day long.
